Recipe Ingredients for gluten-free oatmeal raisin cookies

4 small ripe bananas
1/3 cup melted butter
2 cups oats
1/4 cup sweet potato flour
1/4 cup soy milk
1/2 cup raisins
1/4 cup white sugar
2 tsp cinnamon
1/2 tsp baking powder

Recipe Directions for gluten-free oatmeal raisin cookies

  1. preheat oven to 350F (175C)

  2. mix wet ingredients with a hand blender

  3. mix dry ingredients in another bowl

  4. mix thoroughly together

  5. drop tbsp-sized balls onto greased cookie sheet

  6. cook for 15-20 mins

  7. makes 12 big cookies
