Recipe Ingredients for Gluten Free Oatmeal Corn Cakes (w/ Vegan Option)

0.19 serving Trader Joe's Almond Smooth - Unsweetened Vanilla
2 tbsp Organic Flax Seed Meal
1/2 cup dry Gluten Free Rolled Oats
1/2 cup Corn Flour
1/4 cup Almond Meal/Flour
1/2 tsp Baking Soda
2 tbsp Coconut Palm Sugar
1 tbsp Coconut Oil
6 oz Fat Free French Vanilla
1/4 serving Trader Joe's Almond Smooth - Unsweetened Vanilla
1 tbsp Olive Oil

Recipe Directions for Gluten Free Oatmeal Corn Cakes (w/ Vegan Option)

  1. Prep time: 5 minutes

  2. Cook time: 25 minutes

  3. Ingredients (makes 6-7, 5 inch cakes)

  4. 3 tbsp water or almond milk

  5. 1 tbsp flax meal (we use Bob?s Red Mill)

  6. cup old fashion oats

  7. cup cornmeal (we use Bob?s Red Mill)

  8. cup whole wheat flour

  9. tsp baking soda

  10. 2 tbsp sugar

  11. 1 tbsp coconut oil, melted

  12. 1- 6oz container of vanilla soy yogurt (we use Silk Live!)

  13. cup vanilla almond milk (we use Silk Pure Almond)

  14. Cooking spray

  15. Raspberry Sauce (recipe follows)

  16. 1. In a small bowl, combine 3 tbsp water or almond milk with flax meal. Set aside

  17. 2. In a large bowl, combine oats, con meal, flour, baking soda and sugar

  18. 3. In a medium bowl, mix together melted coconut oil, soy yogurt, flax meal mixture and almond milk until well combined

  19. 4. Pour into oats and corn meal mixture

  20. 5. Whisk together until just combined. Let sit for about 5 minutes.

  21. 6. Generously spray a non stick pan with cooking spay. Spoon about 1/4 cup of batter and cook at medium heat for about 2 minutes per side.

  22. 7. Serve with raspberry sauce or your favorite topping!
