Recipe Ingredients for Gluten Free Meatloaf

2/3 cup corn chex
1 1/2 lb. ground beef
1 cup cooked brown rice
2 eggs
3 tablespoons ketchup
1 teaspoon dried parsley
1 tablespoon chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper

Recipe Directions for Gluten Free Meatloaf

  1. Place corn chex in a plastic bag. Use a rolling pin to crush the cereal. Set aside.

  2. In a large bowl combine ground beef, rice, eggs, ketchup, parsley, onion, salt, and pepper. Add cereal. Mix well.

  3. Shape into two loaves in a 13x9" pan.

  4. Bake at 350 degrees for 45 minutes.

  5. Enjoy!
