A deliciously chewy brownie-bite that's low fat and gluten (and tofu) free! **If you are gluten sensitive PLEASE be sure to check your ingredients!!

Recipe Ingredients for Gluten Free Low Fat Walnut Brownies

1 cup brown sugar
4 oz fat free cream cheese
1/4 cup water
4 tsp egg replacer
1 tbsp instant coffee
1 tbsp vanilla
1 1/2 tbsp vinegar
1/2 cup unsweetened cocoa
1/4 cup quinoa flour
1 tbsp cornstarch
1 tbsp masa harina
1/2 tsp salt
1/2 tsp baking soda
1/2 cup chopped walnuts

Recipe Directions for Gluten Free Low Fat Walnut Brownies

  1. Makes 36 mini-brownies. Grease 36 mini-muffin tins.

  2. In a blender or food processor combine cream cheese, sugar, water, egg replacer (or 2 large egg whites), instant coffee, vanilla, and vinegar. Blend until smooth.

  3. Whisk together cocoa, quinoa flour, cornstarch, masa, salt and baking soda. Stir in nuts. Add to processor and pulse until combine.

  4. Scrape batter into a piping bag or heavy gallon-size zipper bag. Pipe into well greased mini muffin tins. Bake at 350 for 15 minutes, until toothpick comes out nearly clean.

  5. Remove from pan and enjoy!
