Recipe Ingredients for Gluten Free Lasagna

1 lb Mild Pork Sausage
3/4 lb ground beef
1/2 cup minced onion
2 cloves garlic, crushed
28 oz can diced tomatoes
12 ounce tomato paste
15 oz can tomato sauce
1 1/2 cup water
2 tablespoons sugar
1 1/2 tsp dried basil
2 tsp italian seasoning
2 tsp salt
8 oz lasagna noodles (gluten free/rice)
16 ounces ricotta cheese
1 egg
1 tsp salt
1 lb Cheese Cheddar Shredded Medium
3/4 cup grated parmesan cheese
1/4 tsp black pepper

Recipe Directions for Gluten Free Lasagna

  1. In a Dutch oven, cook sausage, ground beef, onion and garlic over medium heat until well browned. Stir in diced tomatoes, tomato paste, tomato sauce, and water. Add sugar and spices. Simmer, covered for about 1 1/2 hours stirring occasionally.

  2. In a mixing bowl combine ricotta, 1 egg and 1 tsp salt

  3. Preheat oven to 375 degrees.

  4. To assemble spread 2 cups of meat sauce in the bottom of a 9x13 or larger pan. Arrange half (roughly 6) of the noodles uncooked over the meat sauce by overlapping them to fill the pan. Spread with one half of the ricotta cheese mixture, top with 1/3 of the cheddar cheese, spoon 2-3 cups of meat sauce over cheddar then top with 1/4 cup of parmesan. Repeat for a second layer then top with remaining cheeses. Cover with foil: to prevent sticking spray foil with cooking spray.

  5. Bake in a preheated over for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.
