Recipe Ingredients for Gluten free Irish Soda Bread

240 g
1/2 tsp salt
1 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1 tbsp honey
1 tsp promise light
1/2 c raisins
2 large eggs, beaten
1 c buttermilk
1 tsp apple cider vinegar
1 tbsp mayonnaise
2 tsps baking soda

Recipe Directions for Gluten free Irish Soda Bread

  1. mix all dry ingredients save baking powder

  2. work promise light into mix. add raisins.

  3. add vinegar to buttermilk, add to mix. blend.

  4. add mayo and eggs and mix. add baking soda and mix.

  5. turn onto floured surface and form 6" ball

  6. cut an x on top surface.

  7. brush with milk, rest ten minutes.

  8. bake at 375 for 35 to 45 minutes.
