I made these for a friend of mine who has Celiac's, and I wanted to keep them all for myself. They're SO GOOD!

Recipe Ingredients for Gluten-free Granola Bars

2 cups Gluten Free Rolled Oats
1 cup puffed rice
3/4 cup flax seeds
1/2 cup peanuts
1/2 cup almonds
3/4 cup brown sugar
1/2 cup honey
1/3 cup mini chocolate chips
1 tsp. vanilla extract
1 tsp. cinnamon

Recipe Directions for Gluten-free Granola Bars

Crush or chop the nuts. Toast the oats, rice, nuts, and seeds in the oven at 400 degrees F for around 10 minutes, or until the mixture becomes slightly fragrant. While the dry ingredients are toasting, heat the brown sugar, honey, cinnamon, and vanilla in a small saucepan, stirring frequently until boiling. Keep the sugar mixture hot until the toasted ingredients are done. Once the dry ingredients are done toasting, pour them into a large mixing bowl, and stir the sugar mixture into them, mixing quickly and thoroughly before the sugar cools. Once the granola is sufficiently mixed, spread onto a baking sheet lined with wax paper that has been sprayed with cooking spray. As the granola cools, spread it and press it into the pan to the desired thickness of the bars. Sprinkle the miniature chocolate chips on top and press down lightly before they warm up from the hot granola (waiting to press them in will get messy!). Let the bars cool for a few hours, and then cut to the desired size with a large knife (don't saw--the bars will break apart!). Enjoy!
