Adapted from http://www.thebakingbeauties.com/2008/10/gluten-free-flax-bread.html This is the best gluten free bread I've had, store bought or homemade, and I've tried a lot of GF bread.

Recipe Ingredients for Gluten Free Flax Bread

1 cup sorghum flour
1/4 cup brown rice flour
1/4 cup millet flour
1/2 cup potato starch
1/4 cup cornstarch
1/4 cup ground flax seed
2 1/2 tsp xanthan gum
1 tsp salt
1 tsp agar
2 eggs
3 tbsp olive oil
2 servings ( 2 tbsp) agave nectar
2 tsp apple cider vinegar
1 cup warm soy milk
2 tsp active dry yeast
1 tsp sugar
1 tbsp ground flax seed
3 tbsp water

Recipe Directions for Gluten Free Flax Bread

  1. Mix 1 tbsp ground flax with 3 tbsp water and set aside.

  2. Proof yeast in 1 cup warm soy milk with 1 tsp sugar in bread machine. When foamy, add other wet ingredients, including flax/water mixture. Next add dry ingredients.

  3. Cook on gluten-free setting, 2 lb loaf, medium crust.
