Gluten-free pancakes suitable for use on the Failsafe diet. Serving size is per pancake.

Recipe Ingredients for Gluten-free Failsafe Pancakes

1 c brown rice flour
3 tbsp tapioca starch
5 tbsp potato flour
6 tbsp sweet rice flour
2 tbsp arrowroot (or cornstarch)
1 tbsp baking powder
1/4 tsp salt
1 1/2 c milk
3 eggs, lightly beaten
2 tbsp sugar
4 tbsp butter, melted

Recipe Directions for Gluten-free Failsafe Pancakes

Mix dry ingredients in a large bowl. Mix wet ingredients separately. Add wet ingredients into dry and mix until well combined. Drop by the 1/4 cupfuls onto a hot griddle; turn when edges get dry and bubbly. Cook for 1 minute more or until golden brown. These freeze well.
