Gluten free choc chip cookies.. made a little healthier

Recipe Ingredients for Gluten free dark chocolate chip cookies with peanut butter and quinoa

0.75 cup dry Quinoa Flakes
1 cup Baking Mix
1/2 cup Applesauce, 100% Natural Style
4 tbsp Unsalted Butter
4 oz Natural Peanut Butter Spread
0.5 tsp Salt, Table
0.75 cup, packed Sugars, Brown
2 large Egg, Whole
1 tsp Vanilla Extract
1 tsp Baking Soda

Recipe Directions for Gluten free dark chocolate chip cookies with peanut butter and quinoa

  1. preheat 375 degrees

  2. soften butter.. add sugar. cream.. add applesauce and peanut butter.. mix with hand mixer. add eggs and beat for a minute or so

  3. Mix all dry ingredients except choc chops and mix into wet ingred. Add vanilla.. mix.. add choc chip and stir.

  4. line baking sheets with parchment. dough is very wet.

  5. spoon dough a few inches apart.. cookies will spread.

  6. Bake for 8 min.. turn pan and cook another 2. If you want a crunchy cookie.. try another 2 min.
