A gluten free and dairy free breakfast

Recipe Ingredients for Gluten free dairy free muffins

8 oz chickpea flour
1 oz flax seeds
1 oz soy protein powder
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp ground ginger
2 banana
1/2 c unsweetened applesauce
1/4 c molasses
2 large eggs
2 tbsp canola oil
1 tsp apple cider vinegar
1 tsp vanilla extract

Recipe Directions for Gluten free dairy free muffins

  1. Heat oven to 350F. Line with baking paper cups a 12 muffins pan.

  2. Mix flour, flax seeds, protein powder, baking powder and soda and spices. Set aside.

  3. In large mixing bowl combine 2 mashed bananas (really ripe), apple sauce, molasses, eggs, oil, vanilla and vinegar, mix well. Add dry ingredients, combine with a few strokes. Bake at 350 in 12 muffins pan for about 20-25 minutes.
