A close approximation to the most recent incarnation of gluten-free muffins. These muffins have lots of cornmeal, so expect less of a cakey texture and more of a corn muffin texture.

Recipe Ingredients for Gluten-free currant macadamia muffins

1 cup Stone ground brown rice flour
66 grams (1/2 cup) Stone ground corn meal
14 grams (1/8 cup) Coconut flour
1/3 cup Arrowroot starch
4 tablespoons Teff flour
1/2 tsp Xanthan gum
2 tsp baking soda
1 tsp baking powder
1/2 tsp cinnamon
1 tsp Ener-G Foods egg replacer
1/2 cup water
26 grams (4 tsp) Flaxseed meal
1 cup Dried currants
1/4 cup Macadamia nuts
1/2 cup honey
112 grams (1/2 cup) light olive oil
120 grams (1/2 cup) Silk Plus Omega-3 Dha Soymilk
4 tablespoons Vanilla Extract , Imitation, Alcohol
2 tablespoons lemon juice
1 egg

Recipe Directions for Gluten-free currant macadamia muffins

  1. Preheat oven to 325F.

  2. Combine and whisk all dry ingredients except currants and macadamia nuts.

  3. Combine and thoroughly mix all wet ingredients.

  4. Combine wet and dry ingredients and quickly add currants and nuts. Pour into muffin pan(s) directly.

  5. Bake for 18 minutes and remove. Do not overcook.
