Gluten-free, dairy-free corn muffins

Recipe Ingredients for Gluten-Free Corn Muffins

0.5 cup White Corn Meal, Plain
0.75 cup Corn Flakes
1 large Egg, Whole
1 Teaspoon Baking Powder
2 tbsp Molasses
4 oz Coconut Milk Beverage
2 tbsp chopped Onions
1 1tsp Olive Oil
1 tbsp Honey

Recipe Directions for Gluten-Free Corn Muffins

  1. Preheat oven to 375 degrees. Lightly grease muffin tin with olive oil. Finely chop the onion. Add corn flakes to food processor and grind until fine and the consistency of the corn meal.

  2. Add all dry ingredients to a large mixing bowl. Stir until mixed together evenly.

  3. Add oil, egg, molasses, honey and onions. Toss together and slowly add just enough coconut milk until mixture is wet, stiff and just mixed to wet all ingredients. Do not over stir. Add heaping spoonfuls to muffin tins 2/3 full until all batter is used evenly distributed. Bake at 375 degrees for 20-25 minutes until toothpick comes out clean and tops are lightly browned. Let cook 5 minutes and remove from pan. Serve hot with honey or butter. Makes: 6 muffins.
