For the flour, use Carol Fenster's blend of sorghum, potato, and tapioca flours.

Recipe Ingredients for Gluten-free corn bread

1 cup corn meal
1 cup flour
2 tsp baking powder
1 tsp xanthan gum
1 tsp sea salt
1/2 cup egg whites
1 cup skim milk
1/3 cup smart balance oil

Recipe Directions for Gluten-free corn bread

  1. Mix dry ingredients

  2. Add eggs, milk, and oil, and mix until smooth

  3. Pour into prepared greased 8x8 pyrex pan

  4. Bake 30 minutes or until top is firm and slightly browned

  5. Cool, slice, and serve
