Gluten Free Cornbread with a good texture

Recipe Ingredients for Gluten Free Corn Bread

1 cup flour, rice
3/4 cups cornmeal
2 tablespoons sugar
2 1/2 teaspoons baking powder
1 teaspoon salt
2 eggs
1 cup 1% milk
1/4 cups I can't believe it's not butter, light

Recipe Directions for Gluten Free Corn Bread

  1. Mix all the dry ingredients well. Include a teaspoon of xanthan gum if desired.

  2. Beat the eggs and mix with the milk and cooled melted butter.

  3. Stir into dry ingredients all at once, just enough to moisten.

  4. Pour the batter into a greased 9" x 9" baking pan.

  5. Bake at 400 for 15-20 minutes or until a toothpick stuck in the center comes out clean.

  6. 9 servings.
