Recipe Ingredients for Gluten-Free Chocolate Chip Pancakes

1 1/4 cups rice flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cup buttermilk or sour cream
2 eggs
1/4 cup vegetable oil
1/3 cup semisweet chocolate chips

Recipe Directions for Gluten-Free Chocolate Chip Pancakes

Add the vegetable oil to buttermilk. In large bowl, mix together all dry ingredients. Add the buttermilk/oil mixture and eggs. Mix and cook on hot griddle, use a 1/4 cup scoop but dont quite fill it all the way to make 16 4" pancakes.
