Recipe Ingredients for Gluten-Free Chicken Cutlets

4 1/4 oz Bread Crumbs
1 tbsp, ground Basil, Dried
1 tbsp Parsley, Dried
1 tsp Garlic Powder
1/2 tsp Salt, Table
1/2 tsp Pepper, Black
2 large Egg, Whole
1/4 serving So Delicious Vanilla Coconut Milk - 1 cup
1/8 cup (8 fl oz) Water
16 oz raw Boneless Skinless Chicken Breast Cutlets
4 tbsp Coconut Oil, Unrefined, Organic

Recipe Directions for Gluten-Free Chicken Cutlets

  1. 1. In a bowl, mix eggs, milk, and water.

  2. 2. In another bowl, mix dry ingredients. (TIP: 4.25 oz of panko crumbs is equal to 1 cups - you may need to make 1.25 cups and toss the extra 1/4 cup at the end)

  3. 3. Wash and pat dry cutlets.

  4. 4. Pound cutlets to desired thinness, and cut to desired size.

  5. 5. Dip each cutlet in egg mixture, and then crumb mixture, coating all sides evenly.

  6. 6. Add 2 TB of coconut oil to each pan. When heated, add cutlets and after they are coated on one side with oil, turn them over and be sure to coat that side with oil. 7. cook over medium high heat.

  7. 8. Turn cutlets over when browned on one side.

  8. 9. When browned and cooked (@30 minutes total), remove to platter.
