Quick, light and gluten free chicken alredo with spinach and mushroom.

Recipe Ingredients for Gluten-Free Chicken Alfredo

8 oz dry Quinoa Pasta Shells
8 oz Chicken
1 lemon yields Lemon Juice
2 clove Garlic
6 oz Spinach
6 oz Mushrooms
0.25 cup Parmesan, Grated Cheese
12 tbsp Light Cream

Recipe Directions for Gluten-Free Chicken Alfredo

  1. cut chicken into 1/4 inch slices.

  2. Sear chicken in olive oil, about 3 minutes.

  3. Meanwhile, saute mushrooms separately.

  4. Remove chicken from pan and set aside.

  5. In same pan, cook garlic 30 seconds.

  6. Add lemon juice, 2 tbs lemon rind, cream, pepper to taste. Stir until sauce starts to thicken, about 5 minutes.

  7. Cover sauce and set aside while pasta cooks.

  8. Reserve 1/2 c pasta water.

  9. Add cooked pasta to sauce, with spinach, parmesan and mushrooms.

  10. Stir and cook until spinach begins to wilt, adding reserved pasta water as necessary.
