Makes 12 servings



preheat 425 degres in small bowl combine 1/2 cup almond milk and 1/2 cup oats... let soak for 15 min grind another 1/2 cup oats in food processor in separate bowl put 1/4 cup water and 1 tbsp chia seeds. let sit until gel forms stir in 2 tbsp unsw. apple sauce. stir into oats and milk mixture in a third bowl combine ground oats, 1/2 tbsp trivia or agave, etc, 1 tsp baking powder, 1/4tsp cinnamon, dash nutmeg stir flour mixture into wet ingredients. shred 1 large carrot and stir into mixture. Mix in 3/4 cup blackberries or blueberries place in greased muffin pan and bake for 17-20 min add chopped walnuts or cocoa nibs to half the batch if you want (optional)
