Gluten Free Corn muffins with blueberries in jumbo muffin tin.

Recipe Ingredients for Gluten Free Blueberry Corn Muffins

3/4 cups corn meal
1 cup White Rice Flour
2 1/2 tablespoons baking powder
1/2 teaspoon salt
1/2 teaspoon Xanthan Gum
1/4 cups butter
2 large eggs
1 cup milk
2 tablespoons milled flaxseed
1 1/4 cups fresh blueberries

Recipe Directions for Gluten Free Blueberry Corn Muffins

  1. Mix dry ingredients except flaxseed.

  2. Beat the 2 eggs and add the milk and milled flaxseed.

  3. Add to the dry ingredients and stir.

  4. Add the melted butter.

  5. Spoon into jumbo muffin cups or greased jumbo muffin pan.

  6. Bake at 400 for 20-25 minutes.

  7. Muffins are done when they spring back when touched in the center and a toothpick inserted comes out clean.
