A healthier twist on a favorite classic

Recipe Ingredients for Gluten Free Banana Nut Oatmeal bread

1/4 cup Becel Light margarine
1 cup apple butter
1 1/4 cup bananas
2 cup brown sugar
20 oz egg white
2 tbs imitation vanilla
5 cup bananas
7 1/2 cup brown rice flour
1 tbs baking powder
2 1/2 tsp salt
2 1/2 cup steel cut oats
1 1/2 cup walnuts
13 1/2 g Xanthan gum

Recipe Directions for Gluten Free Banana Nut Oatmeal bread

  1. Cream margarine, apple butter, 1 1/4 cup bananas(smashed) with brown sugar in a large bowl.

  2. Slowly add egg whites until incorporated.

  3. Add vanilla and the rest of the bananas (smashed).

  4. In a separate bowl sift flour, salt, baking soda & Xanthan gum.

  5. Add flour mixture to banana mixture.

  6. Add oats & nuts mix until evenly distributed.

  7. Put 3.5 cups of batter in each bread pan (should make 5 loaves).

  8. Bake in pre-heated 350 degree oven for 25 minutes and turn and cook an additional 25 minutes. Use toothpick to test if bread is done( should come out clean when inserted to center of bread).
