These can be made with regular all purpose flour, or with Bob's Red Mill All Purpose Baking Flour, they are great both ways. Very delicious and filling when you're on the go.

Recipe Ingredients for Gluten Free Banana Breakfast Cookies

1 cup corn Chex cereal
1/3 cup flour
1/2 tsp baking soda
1 tsp cinnamon
1 banana
1/4 cup brown sugar
1 egg white
1/2 tsp vanilla
2 1/2 tbsp semi sweet chocolate chips

Recipe Directions for Gluten Free Banana Breakfast Cookies

  1. Crush the Chex cereal (make sure it is gluten free if you are intolerant).

  2. Add the cinnamon, baking soda, banana, brown sugar, egg white and vanilla to a mixer and mix on medium until the banana has been sufficiently mashed.

  3. Then add the flour and mix well.

  4. Lastly add the 2.5 tbsp semi sweet chocolate chips to the mix.

  5. The batter will be very liquidy.

  6. Have oven preheated to 365.

  7. Use a large spoon to pour the batter in 8 cookies on a non greased cookie sheet.

  8. Bake for 10 minutes, then pull the cookies out of the oven, let them stand for a minute, then flip them over and bake them for 2 more minutes.

  9. You're done!
