Gluten Free Banana and blueberry muffins

Recipe Ingredients for Gluten Free Banana & Blueberry Muffins

3 cups ground almonds
1/4 tsp salt
1 1/2 tsp baking soda
2 tbsp grapeseed oil
3 eggs
2 cups mashed banana
1 cup blueberries
1/4 cup sugar

Recipe Directions for Gluten Free Banana & Blueberry Muffins

  1. Mix ground almonds, salt, sugar and baking soda in a large bowl.

  2. In a separate bowl whisk the grapeseed oil and eggs together. Then add in 2 cups of mashed bananas (approx. 4 bananas) until smooth.

  3. Carefully fold in blueberries.

  4. Cook for 30 - 35 minutes at 350 degrees.
