A lower fat alternative to frozen fried chicken nuggets, no dairy, no gluten.

Recipe Ingredients for Gluten-Free Baked Chicken Breast Nuggets

4 Serving Chicken
2 tbsp Olive Oil
0.5 cup Cornmeal, Whole-grain, Yellow
1 cup Cereal
0.5 tsp Garlic Salt
0.5 tsp Onion Powder
0.5 tsp Pepper, Black

Recipe Directions for Gluten-Free Baked Chicken Breast Nuggets

  1. Preheat oven to 375 degree. Cut boneless chicken into bite size pieces. Lightly spray baking sheet or line with foil and spray with non-stick spray. Place cornmeal, cornflakes and seasonings into ziploc bag. Seal and shake to mix well. Place chicken pieces into crumb mixture and place on cookie sheet. Bake until cooked through, 15-20 minutes depending on thickness and size of nuggets. Serve with low-fat Ranch dressing or other low fat dipping sauces. Discard remaining crumb mixture.

  2. Coat chicken lightly in oil.
