Gluten Free Apple Oatmeal Muffins

Recipe Ingredients for Gluten Free Apple Oatmeal Muffins

2 cups rolled oats
2 tsp. baking powder
1/4 tsp. baking soda
1 1/2 tsp. cinnamon
1/4 cup dark brown sugar
1/4 cup 0% fat yogurt
1/2 cup apple juice
2 large Egg, Whole
1 egg white
4 tbsp. canola oil
1/2 teaspoon vanilla
1 cup shredded apple
1/2 cup chopped walnuts
1 tbsp. sugar
1/2 teaspoon cinnamon

Recipe Directions for Gluten Free Apple Oatmeal Muffins

  1. Preheat oven to 350

  2. 1. Use a clean coffee bean grinder to process 2 cups of certified gluten free oats into oat

  3. flour. Depending on the size of your grinder, you may have to do this in batches.

  4. 2. Place oat flour, baking pow der, baking soda, brow n sugar and cinnamon in a mixing

  5. bow l. W hisk to blend.

  6. 3. Lightly beat eggs in a small bow l. Add yogurt, apple juice, oil and vanilla. W hisk to

  7. blend and pour into bow l w ith dry ingredients. Stir to thoroughly blend.

  8. 4. Fold in shredded apple and w alnuts. Stir just until blended.

  9. 5. Line muffin pan w ith paper liners, or lightly grease pan and fill each muffin cup about

  10. 3/4 full.

  11. 6. Bake for 16 minutes or until a toothpick inserted in the center of muffin comes out

  12. clean.

  13. 7. Sprinkle hot muffins w ith cinnamon sugar mixture and allow muffins to cool for about

  14. 10-15 minutes before serving.
