Recipe Ingredients for Gluten Free Apple Muffins

1.75 cup Brown Rice Flour
5 grams Guar Gum
1 tbsp Organic Golden Flaxseed Meal
1.16 tsp Pure Baking Soda
1.16 serving cream of tarter
2.96 grams Arrowroot Flour
0.5 tsp Sea Salt
0.5 tsp Cinnamon, Ground
12.5 tsp Natural Cane Sugar
1 large Egg, Whole
1.25 cup Blue Menu Fortified Soy Beverage Vanilla
0.25 cup Vegetable Oil, Canola
1 cup, quartered or chopped Apples

Recipe Directions for Gluten Free Apple Muffins

  1. Gluten-free Apple Muffin Recipe

  2. Pre-heat oven to 350 degrees F.

  3. Grease 24 mini muffin cups.

  4. Dry Ingredients

  5. Sift together:

  6. ? 2 cups gluten-free flour (preferably whole-grain gluten-free flour) (1 cups of Brown Rice Flour)

  7. ? 1 tsp xanthan gum or guar gum ( if not using a pre-packaged mix that has it included)

  8. ? 1 tbsp flaxseed meal

  9. ? 3 and 1/2 tsp gluten-free baking powder

  10. ? 1/2 tsp salt (regular or sea salt)

  11. ? 1/2 tsp cinnamon

  12. ? 1/4 cup sugar cane (1/2 cup for a sweeter dessert muffin)

  13. Wet Ingredients

  14. Beat together:

  15. ? 1 egg

  16. ? 1 and 1/4 cup soy milk (or rice milk)

  17. ? 1/4 canola oil(or a preferred lighter tasting oil)

  18. Add the liquid ingredients to the dry ingredients. Stir only until combined. Batter will be lumpy.

  19. Fold in 1 cup of chopped apple. (If you want to make it very simple, you can use a jar of apple baby food.) Folding in 1/2 cup of chopped walnuts or pecans is optional.

  20. Fill muffin cups two thirds full. Slightly more for paper cups. Bake for 20 minutes. You may need to adjust the temperature and time for your own oven.
