Filling, tasty, healthy and hearty. These gluten-free pancakes are sure to be a hit!

Recipe Ingredients for Gluten-Free Apple Cinnamon Quinoa Pancakes

1 1/2 cup quinoa
1.25 cup whole milk
2 egg
1 1/2 tsp baking powder
1 tsp salt
1 tsp ground cinnamon
3 tbsp coconut oil
2 med apples

Recipe Directions for Gluten-Free Apple Cinnamon Quinoa Pancakes

  1. Measure quinoa, and process in Vita-mix or cuisinart food processor until fine flour is formed.

  2. Sift in salt, baking powder, cinnamon then mix in eggs, coconut oil and milk.

  3. Peel and grate your apples, add to mix.

  4. Spoon onto pre-heated griddle (medium heat) in slightly over-filled 1/3 cup measuring cup.

  5. Flip when bubbles start forming and edges start solidifying slightly. This takes about 3 minutes, or so.

  6. Dress them up with 100% maple syrup, and you've got a fantastic breakfast!
