Gluten/dairy/wheat free lemon victoria sponge

Recipe Ingredients for Gluten/dairy/wheat free lemon victoria sponge

75 grams SOYA SPREAD
25 grams Vegetable Oil
200 grams Sugars, Brown
120 grams Egg, Whole
2 Serving Flour
1.5 large Egg, Whole

Recipe Directions for Gluten/dairy/wheat free lemon victoria sponge

  1. 1. Method for Cake

  2. 2. Heat oven to 180C/350F/Gas Mark 4.

  3. 3. Grease & line 2 x 7 inch Victoria Sandwich sponge tins.

  4. 4. Cream together the soya/dairy spread, vegetable oil and suger until light and fluffy.

  5. 5. Then add the eggs, lemon juice and flour, mix until the mixture resembles a loose sponge consistancy.

  6. 6. Pour cake batter into tins and bake for aprrox 20 minutes

  7. 7. To check if the cakes are cooked lightly tap the top, if they spring back then the cake is cooked, if not leave the tins in the oven for a further 5 minutes.

  8. 8. Remove from oven & place tins on racks until the cakes are completely cooled.

  9. 9. To make the Lemon Curd

  10. 10. In a medium saucepan mix the sugar, cornflour/starch and lemon juice.

  11. 11. Cook and stir until the mixture has thickened and is bubbly.

  12. 12. Very slowly add the lemon mixture to the beaten eggs - keep stirring.

  13. 13. Then pure the lemon/egg mixture back into the pan, cook and stir for a futher 2 minutes.

  14. 14. Cover the mixture with clingfilm/waxed paper and leave to cool.

  15. 15. This recipe makes 1 cup of sauce.

  16. 16. Sandwich cooled cakes together with cooled Lemon Curd.

  17. 17. You can either use all the lemon curd to fill the cake or leave some to spread on top of the cake.

  18. 18. Either way it tastes delicious.
