1 tbs lime zest
1 cup sugar
1/4 teaspoon sea salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 tablespoons light olive oil
2 tsp vanilla extract
1/4 cup coconut flakes
1/2 cup water

  1. preheat oven to 350 and prep muffin tins

  2. mix dry ingredients

  3. 1/2 cup organic cane sugar

  4. 1/4 teaspoon sea salt

  5. 1/2 teaspoon baking powder

  6. 1/2 teaspoon baking soda

  7. 1/2 teaspoon xanthan gum

  8. Add in:

  9. 1/2 cup warm water

  10. 1 egg

  11. 1.5 tablespoons light olive oil

  12. 1/2 tablespoon bourbon vanilla extract

  13. juice of 2 limes

  14. zest of one lime
