A hearty morning muffin with lower fat and higher fiber than usual - enjoy!

Recipe Ingredients for Glorious Morning Muffins

2 eggs
1/2 c. oil, vegetable
1/4 c. apple sauce
1/4 c. yogurt, low-fat
2 tsp. vanilla
2 c. flour, unbleached
1/4 c. wheat bran
1/2 c. sugar, brown, packed
1/4 c. agave syrup
2 tsp. baking soda
2 tsp. cinnamon, ground
1/2 tsp. salt
1 1/2 c. carrots, shredded (2 - 3 medium)
1 c. apple, peeled and shredded
1/2 c. coconut, unsweetened, shredded
1/2 c. prunes, pitted, chopped
1/2 c. almonds

Recipe Directions for Glorious Morning Muffins

  1. Beat eggs, oil, milk and vanilla until well blended, stir in applesauce and agave syrup.

  2. Add flour, bran, brown sugar, baking soda, cinnamon ad salt; stir just until dry ingredients are moistened. Do not over mix or the muffins will 'peak' and be tough

  3. Stir in carrots, apple, coconut, prunes and almonds until just combined

  4. Divide evenly in lined, or greased and floured, muffin tin, filling each cup about 3/4 full. if desired sprinkle additional chopped almonds (up to 1/4 cup total) on top of each (this is not included in calorie calculation)

  5. Bake in middle of 350 degree oven for 20 - 25 minutes, rotating once during baking period, until toothpick inserted in center of muffin comes out clean.

  6. Cool 5 minutes in pan, then remove from pan and cool completely on wire rack.
