Recipe Ingredients for Gloria's Healthy Banana Flax Bread

2 tbsp. I can't Believe it's not Butter
1/4 c. prune puree or unsweetened applesauce
3/4 c. splenda brown sugar Blend (Splenda)
1 c. egg substitute
4 bananas, mashed
2 tsp. vanilla
1 1/2 c. white flour
1/2 c. whole wheat pastry flour
1 1/2 c. flaxseed meal
1 tsp. salt, (Morton's 25% less Sodium)
1 1/2 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. nutmeg
3/4 c. chopped dates
1/2 c chopped walnuts
1 c. quick-cooking oatmeal

Recipe Directions for Gloria's Healthy Banana Flax Bread

  1. Preheat oven to 350 degrees

  2. Cream butter and sugar well. Beat in prunes or applesauce. Beat in egg substitute a small amount at a time and beat very well. Add mashed bananas and vanilla. Add flours that have been mixed with/salt, soda, cinnamon, nutmeg and flaxseed meal. Blend in dates, nuts and oatmeal. Pour in two sprayed with nonstick cooking spray and floured loaf pans. Sprinkle with small amounts of oatmeal.

  3. Bake at 350 degrees for about 40-45 minutes or until toothpick comes out clean.
