Recipe Ingredients for Glenda's Greek Salad

3 heads of romaine lettuce
2 cucumber, peeled, seeded, sliced
2 tomato, chopped
6 oz black olive
1 red onion, quartered and sliced
1/2 cup reduced fat feta cheese
1/8 cup olive oil
1/4 cup lemon juice
1/8 cup oregano
1/8 cup parsley
2 cloves garlic
1 tsp salt

Recipe Directions for Glenda's Greek Salad

  1. Mix oil, juice, and spices and let set in fridge overnight.

  2. combine salad ingredients

  3. Pour dressing over salad and toss, serve immediately

  4. Blue cheese, Stillton, or Roquefort can be used in place of Feta Cheese

  5. You can also use green onions in place of red onions

  6. serves 4-6
