Delicious easy recipe for home canning. Makes six pints or three quarts. I counted 1 cup as a serving.

Recipe Ingredients for Glazed Carrots

112 oz Carrots
182 grams Sugars, Brown
1 cup Orange Juice

Recipe Directions for Glazed Carrots

  1. Wash and peel 7 lbs. carrots, wash again. Cut into 3-inch pieces, slicing thicker ends in half lengthwise.

  2. Combine 2 cups brown sugar, 2 cups water, and 1 cup orange juice in a sauce pot. Cook over medium heat, stirring until sugar dissolves.

  3. Keep syrup hot. Pack carrots tightly into hot jars, leaving 1 inch head space. Ladle hot syrup over carrots, leaving 1 inch head space.

  4. Remove air bubbles, adjust two piece caps. Process pints and quarts 30 minutes at 10 lbs. pressure.

  5. Yields 6 pints or 3 quarts.
