speedy salad sub romaine or whatever other green you like! Iceberg just happened to be what I had on hand.

Recipe Ingredients for Girlfighting's Quick Salad

1/2 head iceberg lettuce
2 scallions
2 tablespoons olive oil
1 tablespoon balsamic vineager
1/2 teaspoon dijon mustard

Recipe Directions for Girlfighting's Quick Salad

  1. tear, shred, chop, etc the lettuce

  2. dice scallions and add to lettuce

  3. add mustard and vinegar to a small mixing bowl whisk until blended

  4. slowly drizzle in oil to vinegar mixture whisking constantly until well blended

  5. pour over lettuce

  6. mix

  7. eat
