Meatballs with egg and lemon sauce.

Recipe Ingredients for Giouverlakia

1 serving Minced meat (half and half)
1 large Onions
150 grams Rice, White, Glutinous, Cooked
2 medium Egg, Whole
1 lemon yields Lemon Juice
2 tbsp Olive Oil
1 medium Carrots
3 tbsp Parsley
1 serving Patent Flour

Recipe Directions for Giouverlakia

  1. In a bowl, mix the minced meat, onion, carrot, half of the olive oil, parsley, salt and pepper.

  2. Make small meatballs, roll them in the flour and set them aside.

  3. In a big casserole, add 3 big glasses of water, the rest of the olive oil, 1 tbsp butter (optional) and bring to a boil.

  4. Once the water starts boiling, reduce heat and carefully add the meatballs.

  5. Add some more water if you prefer a soup or just to cover the meatballs if you want more consistency.

  6. Boil in medium heat for 30'-40'.

  7. Once the meat is ready, turn off the heat.

  8. In a small bowl, beat the egg whites until foamy and add the egg yolks. Gradually beat in the lemon juice and start adding spoonfulls of the juices.

  9. Mix well and pour to the casserole while shaking it gently.

  10. Serve with more lemon and freshly ground pepper.
