From the Fanny Farmer cookbook with my mother's favorite addition, apricot jam. We didn't have walnuts so no walnuts in this one.

Recipe Ingredients for Ginny's Nutless Banana Bread

3 bananas
2 eggs
2 cups flour
3/4 cups sugar
1 tsp salt
1 tsp baking soda
1 tbsp apricot jam

Recipe Directions for Ginny's Nutless Banana Bread

  1. Preheat oven to 350.

  2. Grease a loaf pan.

  3. Mash the bananas and mix them with the eggs and jam.

  4. Stir in the flour, sugar, salt, and baking soda.

  5. Put the batter in the pan and bake for 1 hour.

  6. Remove cake from pan to rack.

  7. Makes 16 thin-ish, satisfying slices.
