Gingery Carrot Soup with Orange and Parsley

Recipe Ingredients for Gingery Carrot Soup with Orange and Parsley

1 tbsp olive oil
2 onions, chopped
2 tbsp gingerroot
1 tbsp finely grated orange zest
1 tsp pepper
6 cups carrots
4 cups chicken stock
1 1/2 cups freshly squeezed orange juice
1 cup parsley

Recipe Directions for Gingery Carrot Soup with Orange and Parsley

  1. Heat oil over medium heat for 30 seconds. Add onions and cook, stirring, until softened, above 3 minutes. Add ginger, orange zest, pepper and cook, stirring for 1 minute. Transfer to slow cooker stoneware. Add carrots and chicken stock and stir well.

  2. Cover and cook on Low for 8 hours or on High for 4 hours, until carrots are tender. Add orange juice and parsley. Cover and cook on High for 20 minutes, until heated through.

  3. Working in batches, puree soups in a food processor or blender.
