2 cucumbers, sliced thinly
1/2 cup rice wine vinegar
1/4 cup cider vinegar
3 tbsp brown sugar
1 tsp soy sauce
1/2 cup water
1/8 tsp sesame oil
1/2 tsp ginger, ground and dried

  1. Whisk all the liquids and spices together in a large tupperware container.

  2. Toss in the cucumbers and mash down until covered by the liquid (add more vinegar and water if necessary).
