These cookies are relatively easy to make and keep well both fresh and frozen.

Recipe Ingredients for GingerSnap Cookies

3/4 cup margarine
1 cup sugar
1 large egg
1/2 cup molasses
2 1/2 cup flour
2 tsp baking soda
2 tsp ground ginger
1 tsp cinnamon
1/2 tsp salt
1/3 cup sugar (for rolling)

Recipe Directions for GingerSnap Cookies

  1. Pre-heat oven to 350F.

  2. Cream together butter and first amount of sugar. Add egg, mix well. Add molasses, mix well.

  3. In a separate bowl, combine dry ingredients (except second amount of sugar).

  4. Add dry ingredients gradually to wet, mix well. Remember to scrape bowl while mixing.

  5. Roll dough into 1" balls.

  6. For baking: Roll balls in sugar and place on greased (optional, helps prevent sticking) baking sheet. Flatten with fork or stamp and bake for 7-8 minutes (dark pans) or 10-12 minutes (shiny or foil pans)

  7. For Freezing: roll balls in flour and freeze in single layer on waxed paper. After dough is completely frozen transfer to airtight container or bag. For later baking allow to thaw on cookie sheet and flatten prior to baking.

  8. Makes 6-9 dozen cookies, depending on size.
