This dish is very fast to prepare, and a great alternative to regular lasagna. It is very low in calories, and even the pickiest eater should be able to get down at least a few bites :) This pairs perfectly with a Mediterranean salad!

Recipe Ingredients for Ginger's Eggplant Parmesana

1 eggplant
1/2 cup mozzarella cheese
1/8 cup grated parmesan cheese
3 cups pasta sauce
1 clove garlic
1 onion
1 cup mushrooms
8 oz extra firm tofu
1/2 tbsp extra virgin olive oil

Recipe Directions for Ginger's Eggplant Parmesana

  1. Wash and cut your eggplant into thin slices. Splash the olive oil on the bottom of a large lasagna pan, and start to layer on the eggplant.

  2. For the pasta sauce, I use Catelli Garden Select, Parmesan and Romano. Just layer half the bottle (or less) over the eggplant.

  3. Slice the onion and heat it up over medium heat on a nonstick skillet. Once it gets a little tender, add a minced clove of garlic. Once you can smell the garlic, add it over top of the sauce.

  4. Slice your mushrooms, and place them over top. Add some crumbled tofu, and then repeat this layering system until you are out of eggplant.

  5. Top off the casserole with your mozzarella and parmesan cheese. Cover the dish with aluminum foil

  6. Bake in the oven at 400F for about an hour.

  7. Let it cool, and enjoy! This pairs perfectly with a mediterannian salad!
