4 oz watercress, 1 large bunch
4 cups chicken broth
1 teaspoon ginger , minced
6 oz water chestnuts canned , rinsed and drained

Recipe Directions for Gingered Watercress Soup

  1. Rinse watercress and discard tough stems. In a medium saucepan, bring broth to a boil over medium-high heat. add watercress and ginger. cook until water cress is wilted but still bright green, about 2 minutes.

  2. Add water chestnuts and serve.
