Recipe Ingredients for Gingered Pumpkin and Cranberry Soup

2 tbsp olive oil
3/4 pound fresh pumpkin, peeled, seeded, and cubed
1 small baking potato, peeled and cubed
1 medium carrot, coarsely chopped
1 medium granny smith apple, peeled, cored, and sliced
1/3 cup fresh cranberries
1 tsp coriander
2 tsp fresh ginger, grated
2 1/2 cups water
3/4 cup unsweetened apple juice
1/2 tsp salt
1/4 tsp black pepper, freshly ground (or to taste)
1/4 tsp nutmeg, freshly ground (or to taste)

Recipe Directions for Gingered Pumpkin and Cranberry Soup

  1. Saute vegetables, fruits, and spices in a large saucepan for 15 minutes, stirring occasionally.

  2. Add the water (or stock) and juice, bring to a boil then lower the heat and simmer until the vegetables are tender.

  3. Drain the vegetables, reserving the liquid. Puree the vegetables, adding as much liquid as needed to make a smooth puree.

  4. Put the puree back in the pan and add as much of the liquid as needed to get the consistency you desire. Gently reheat and add the pepper, salt, and nutmeg.
