Recipe Ingredients for Gingered Lime Gelatin

20 ounces pineapple tidbits, unsweetened {92273]
6 ounces lime gelatin, sugar-free
1 1/2 cups boiling water
1 cup ginger ale, diet , chilled
1/4 teaspoon ground ginger

Recipe Directions for Gingered Lime Gelatin

  1. Drain pineapple, reserving juice; set the pineapple aside. In a bowl, dissolve the gelatin in water. Stir in ginger ale, ginger and the reserved juice. Chill until syrupy, about 45 minutes. Fold in pineapple. Transfer to a 6-cup mold coated with cooking spray. Refrigerate until firm. Unmold onto a serving platter.

  2. Yield: 12 servings. Prep: 10 min. + chilling
