Recipe Ingredients for Gingered Chicken Thighs

1 lb chicken thighs, boneless, skinless
2 tablespoons ginger, ground
2 tablespoons orange juice
2 tablespoons honey
2 tablespoons reduced sodium soy sauce
2 cloves garlic, minced
1 tsp red pepper flakes, crushed
1 tsp curry powder, ground
2 tablespoons chicken broth
2 tablespoons peanut butter
1 tsp ginger, ground
2 tablespoons orange juice

Recipe Directions for Gingered Chicken Thighs

  1. Combine first 8 ingredients, adding chicken after everything is blended, in a large Ziploc bag. Turn to coat chicken a few times. Let marinate in fridge up to 4 hours.

  2. Preheat oven to 350.

  3. Heat skillet coated with cooking spray to medium high.

  4. Remove chicken from bag and discard marinade and bag. Sear chicken on both sides to golden brown, but not cooked through.

  5. Move chicken to a baking pan coated with cooking spray. Whisk remaining 4 ingredients in a small bowl and pour over chicken.

  6. Bake for 20-30 minutes or until chicken is no longer pink and juices run clear.
