Recipe Ingredients for Gingered chicken and pears

9 ounce chicken
1/4 cup flour
1 tbsp. olive oil
1/2 tbsp. margarine, country crock
1 tbsp. ginger root
1/2 onion
1/2 cup chicken broth
1 1/2 pears, peeled

Recipe Directions for Gingered chicken and pears

  1. Sprinkle chicken breasts with plenty of salt and pepper and dredge in flour. In heavy skillet, combine oil and marg. over med. heat. When foamy, add chicken, brown on both sides but do not cook through, about 5 min total. Remove chicken to plate.

  2. Increase heat to med. high, add ginger root and onion to drippings remaining in skillet. Cook and stir until tender, about 4-5 minutes. Add chicken broth, bring to boil. Return chicken to skillet along with pear slices, reduce heat to med -low. Simmer for 6-10 minutes or until chicken is cooked through and sauce is thickened. serve over couscous or hot cooked rice.
