Gingered Chicken with Honey from Wendy Veale's The Chicken Cookbook, p54. "This dish is very simply prepared and best accompanied with pilau rice." It is best to follow the recipe and use bone-in chicken breasts: this helps keep the chicken moist. The sauce is delicious, so we always increase the amount of sauce we make and this recipe reflects our preferences. It allows you to smother your chicken! Clarity of Ingredients/Original Recipe: 2 tbsp sunflower oil 4 chicken breasts, skinned and part-boned (approx. 175g each) 2 inch root ginger, peeled and cut into tiny matchsticks 2 medium onions, peeled and sliced 2 tsp ground ginger 4 tbsp light soy sauce 4 tbsp dry sherry 2 tbsp clear honey salt and freshly ground black pepper 3 spring onions (scallions) trimmed and finely chopped, to garnish

6 tsp Unico Sunflower Oil
30 oz Chicken
15 grams Ginger Root
600 grams Onions
4 tsp Ginger, Ground
8 serving Soy Sauce
4 oz Sherry
4 tbsp Honey, Strained Or Extracted
1/4 tsp Salt, Table
1/4 tsp Pepper, Black
3 medium (4-1/8" long) Onions, Spring Or Scallions

Recipe Directions for Gingered Chicken with Honey (The Chicken Cookbook)

  1. Heat the oil in a pan and saut? the chicken pieces until golden.

  2. Add the fresh ginger and onions to the oil and saut? until the onions soften. Stir in the ground ginger and cook for a further 2 minutes.

  3. Return the chicken to the pan and cook for a minute more, then pour on the soy sauce, dry sherry and honey.

  4. Cover with a tight-fitting lid and simmer for 30 minutes or until the chicken is tender.

  5. Transfer the chicken and onions to a warm serving dish. Turn up the heat and boil the sauce to reduce it slightly. Season to taste.

  6. Spoon the sauce over the chicken and garnish with a sprinkling of spring onions. Serve hot.
