Recipe Ingredients for Gingerbread Muffins

1 3/4 cups whole grain flour
1/2 cup granulated sugar
2 tsp. baking powder
1/4 tsp. baking soda
1 tsp. ginger
1/2 tsp. cinnamon
1/4 tsp. salt
1/3 cup nonfat milk
1 egg
1 small apple
1/4 cup brown sugar
1/5 cup applesauce
1 tablespoon water

Recipe Directions for Gingerbread Muffins

  1. Preheat oven to 375

  2. Line a 12-cup muffin pan with liners

  3. Mix dry ingredients (flour, sugars, baking powder, baking soda, ginger, cinnamon, salt)

  4. Peel and finely chop 1 small apple (a tart variety), add to dry ingredients

  5. Mix wet ingredients (milk, egg, applesauce, water)

  6. Create a well in middle of dry ingredients, mix in wet ingredients until just combined

  7. Spoon into muffin liners until 2/3 full

  8. Bake about 20 minutes
