Recipe Ingredients for Gingerbread Muffins

3/4 c. whole wheat flour
1/4 c. oat bran
1 t. ground ginger
1/2 t. baking soda
1/4 t. salt
1 t. cinnamon
1/2 t. clove
1/4 c. molasses
1/3 c. almond milk
1 T almond milk
1 medium ripe banana
1/4 c. raisins
1/4 c. walnuts

Recipe Directions for Gingerbread Muffins

  1. Preheat oven to 350*

  2. Combine the flour, oat bran, ginger, baking soda, salt, cinnamon, and clove in a large bowl. Set aside, and in a medium bowl, mash the banana with a fork. Stir in the molasses and almond milk.

  3. Add the wet to the dry, and stir until just combined. Fold in the walnuts and raisins.

  4. Spoon into sprayed muffin tins and bake for 30 minutes, or until a toothpick inserted in center comes out clean.
