Recipe Ingredients for Gingerbread Muffins Made Healthiest

3 tbsp applesauce
2 tbsp brown sugar
1/2 tbsp molasses
1 egg
1/2 cup all-purpose flour
1 tbsp flaxseed
1 tbsp wheat germ
1/2 tbsp cocoa powder
1/2 tsp ground ginger
1/2 tsp ground cinnamon
1/4 tsp ground allspice
1/4 tsp ground nutmeg
1/8 teaspoon salt
1/2 teaspoon baking soda
1/4 cup skim milk

Recipe Directions for Gingerbread Muffins Made Healthiest

  1. Preheat the oven to 350 degrees F (175 degrees C).

  2. Butter or line with paper liners a 12-cup muffin tin.

  3. Mix applesauce and sugar.

  4. Add the molasses and egg

  5. Sift together the flours, cocoa powder, ginger, cinnamon, allspice, nutmeg and salt.

  6. Heat the milk to boiling and dissolve baking soda in it

  7. Add the flour mixture to the liquid mixture (not milk) and stir until just combined.

  8. Stir in the hot milk mixture.

  9. Pour the batter evenly into the prepared tins.

  10. Bake at 350 degrees F (175 degrees C) for 20 minutes or until slightly springy to the touch.

  11. Allow to cool a few minutes in the pan and remove to a rack to cool.
