Gingerbread cupcakes with Lemon Cream Cheese Frosting

Recipe Ingredients for Gingerbread Cupcakes

1 c. flour
3/4 tsp. baking soda
1 tbsp. ground ginger
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 c. brown sugar
1 egg
7 tbsp. butter, softened
1/4 c. milk
2 tbsp. molasses
4 oz. light cream cheese, softened
1 c. confectioners' sugar
1/4 c lemon juice

Recipe Directions for Gingerbread Cupcakes

  1. What to do:

  2. 1. Preheat the oven to 330F

  3. 2. Line a 12 cupcake pan, with cupcake papers.

  4. 3. Sift the flours, baking soda, ginger, cinnamon and nutmeg into a large bowl.

  5. 4. Add the remaining ingredients.

  6. 5. Using an electric mixer, beat until combined and lightens in color (about 2 min.).

  7. 6. Divide the mixture evenly between the cupcake liners, (do not overfill)

  8. 7. Bake for 30 min.

  9. 8. Remove tin from the oven, transfer to rack and cool. Frost with Lemon Cream Cheese Frosting. Cupcakes are good with out frosting too.

  10. Makes 12 Cupcakes.

  11. Store in an airtight container for up to 3 days.

  12. Lemon Cream Cheese Frosting:

  13. 1. Beat together cream cheese and confectioner's sugar. Add zest and juice. Additional lemon juice or milk may be added to achieve desired consistency. Frost cupcakes.
